  1. Fry the sliced yellow onion (or shallots) in a large cast iron pot for 5 minutes or until caramelised. A wok would also work. Set aside.
  2. Add the coconut milk to the pot. Bring to a boil over medium heat.
  3. Add curry paste, stir and cook for 4 minutes. The texture of the curry will thicken.
  4. Add fish sauce, brown sugar, tomatoes, fried onion and 2 tbsp water.
  5. Add sliced chicken breasts, chopped carrots and chopped potato. Keep stirring until chicken breasts are cooked at medium heat. Then cover and simmer at low heat until carrots and potatoes are cooked.
