Yellow Chicken Curry: Kid Friendly Curry

Want yellow chicken curry but don’t want to order in? Prepare the yellow curry paste ahead of time and use 1 1/2 tbsp of it for this yellow chicken curry recipe. This is a major enhancement to my first yellow chicken curry recipe. Curry recipes are easily tweaked to your liking, using available ingredients in your pantry and fridge. No meat? Use tofu! However, the use of fish sauce does not make this a vegetarian recipe. Similar to the first version of this recipe, this is a mild curry as that is what my family likes. The recipe serves roughly 4 to 6 people.

Yellow Chicken Curry

This is a kid-friendly curryl! To make the yellow turmeric rice, add 1 tbsp of turmeric powder and 1 tsp of ground cinnamon and as much raisins as you desire. Follow your rice cooker instructions. I cooked two cups of rice and added about 2 cups of water. Both my kids love the turmeric raisin rice. Art ate just the rice and raisins while Chip (my youngest) devoured his yellow chicken curry and rice. Art doesn’t like his food touching, so I served rice and curry separately. Chip did not have a preference. My husband went for seconds. I had to stop myself from having another serving.

Since we have been isolating ourselves, we have been cooking more often. I hope to post at least once a month. I am forced to use what’s on hand, so this is why I didn’t use shallots. Normally, I LOVE using shallots to make yellow chicken curry.

Did I tell you that I discovered how amazing Instacart is? I can get groceries delivered to my door from Superstore or T&T Supermarket. I prefer shopping at Lucky Supermarket, but we don’t want to chance getting sick during such uncertain times. It is more expensive than getting groceries in person, but we save so much time packing the kids. Plus, I’d probably get death glares for bringing my kids to the grocery stores these days.

I know I have been neglecting my food blog. It’s been a fun journey juggling a career and two kids. I am thankful that my husband cares for the kids while I’m at work.

  1. Fry the sliced yellow onion (or shallots) in a large cast iron pot for 5 minutes or until caramelised. A wok would also work. Set aside.
  2. Add the coconut milk to the pot. Bring to a boil over medium heat.
  3. Add curry paste, stir and cook for 4 minutes. The texture of the curry will thicken.
  4. Add fish sauce, brown sugar, tomatoes, fried onion and 2 tbsp water.
  5. Add sliced chicken breasts, chopped carrots and chopped potato. Keep stirring until chicken breasts are cooked at medium heat. Then cover and simmer at low heat until carrots and potatoes are cooked.

    How easy do you think it could be changed for instant pot? though, I’m sure I could just stand there and cook it too, but sometimes I just like throwing things in and forgetting about it until dinner time 😀

    1. Thanks! I think you can adapt it to Instant Pot though I have yet to try. The coconut milk needs to be cooked with the curry paste, so maybe stir in the curry paste with the coconut milk and manual pressure cook for 1 to 2 minutes. Then add all your ingredients and manual pressure cook for 10 minutes and have 5 minutes natural pressure release. I will try it with the Instant Pot hopefully soon and update here with IP instructions 🙂

  2. I love a good curry, and I don’t make enough of them – partly because it can be a challenge to make recipes that the kids can get on board with. So I’m definitely happy to see this recipe! Love that you’ve got your own recipe for the curry paste too – nothing beats the flavour of homemade!

    1. I think my kids like the curry because of the rice. I try to make one dish fun, which encourages them to eat it. Raisins seems to be a kid’s favourite — once they start eating the raisins, then they might trust the rest of their dinner. Kids are funny that way.
