Double chocolate banana walnut loaf

Disclaimer: I did not follow any recipes; I weighed everything and guessed a ratio between sugar, fat and flour. Follow my creation at your own risk!

Makes two small loaves in the toaster oven.

Ingredients:
1 cup butter, room temp
6 to 8 oz sugar, 2 tsp cinnamon
5 mashed bananas
4 eggs beaten
Vanilla essence

Optional: chocolate chips and chopped walnuts. 0.5 cup of each

Dry ingredients:
Cocoa powder, 2 tbsp heaps
1 lb and 6oz of flour, sifted with 1 tsp baking powder and 1 tsp baking soda, 1 tsp salt

1. Cream butter and sugar mixture. Alternate egg and sugar, beat on high speed. Mix in mashed bananas.

2. Sift dry ingredients together. Add in portions of flour mixture in thirds and fold into mashed banana butter batter. If adding cocoa powder, reduce flour. But 2 tbsp is not a huge amount.

3. Fold in walnuts and choc chips.

4. If you use regular oven, bake at 375F. But with a toaster oven, bake at 275F for half an hour to 45 minutes.

Yep, my oven is still out of commission!!
