There is nothing shameful about cheat-baking, especially when you’ve got unexpected guests AND you’ve got less than an hour to whip something up. Plus, it was buy one get one free cake mix at Safeway. Sometimes, cake mixes are great when I want to focus more on improving my buttercream piping skills on cakes — instead of fussing on the baking processes.

This is my mother-in-law’s “Crackled Cookies” recipe; she developed it herself back in the 1970s. So easy and quick. It takes 10 to 12 minutes for each dozen.

 

350°F oven; 10 to 12 minutes

1 boxed cake mix

2 eggs

1 tbsp water

1/3 cup margarine

 

If you are using Duncan Hine‘s Apple Caramel cake mix, you will want to do the following to the caramel sauce:
1/3 cup milk
1 tbsp vegetable oil
Stir

 

The best thing about this recipe? It’s so versatile. You can add nuts or raisins or other candy pieces of your choice to complement the flavours of your chosen cake mix.
For example, roll chocolate mix cookie dough in icing sugar before baking.
Add nuts to a cheat-bake butter-pecan cookie dough.

 

The easiest drop-cookie recipe. Ever.

P.S. Don’t bother piping these cookies. They won’t stay piped. I tried being fancy: piping them into rosettes, but they just ended up smoother and rounder.

P.P.S. Other tips: Try to avoid dropping the caramel sauce on the centre of the cookie, prior to baking. My husband called it a “nipple” cookie!

I probably could have garnished my cookies with sea-salt to turn them into Apple Salted-Caramel cookies, but apple and caramel together, are already a great flavour combination.

Make into a cookie dough. Drop with a teaspoon, gently press flat, and place on parchment-lined cookie trays. Be sure to leave enough room between each cookie as they will spread.

Bake each dozen (batch) for 10 to 12 minutes total.
