Ever since I discovered how instant pudding mixes can make any batter fluffy and moist, I have been putting it in almost everything. Oops, I have given you the secret ingredient.

While I still struggle with frying eggs, waffles or pancakes are my redeeming picture-worthy plate items. (I tend to break the yolks) Since I was running out of stove top space, I pan-fried the bacon in a cast iron pan in the oven at 300F for over 20 minutes. It knocked it out of the park, without much shrinkage. Hubby and his best friend approved.
Banana Cinnamon Waffles
INGREDIENTS Serves 3 people; double the recipe if needed
A
1 1/2 cup Pancake mix of your choice (I used Coyote; my husband’s choice)
1 tsp cinnamon
1 tbsp sugar
1 tbsp instant vanilla pudding mix
B
1 large egg
1 tsp almond extract
1/2 cup whipping cream
1/2 cup eggnog
1/2 cup milk (or use 1 1/2 cup milk, if caloric-conscious)
Mash the following together
1 banana, mashed
1 1/2 tbsp icing sugar
Whisk A. Add B and bananas to whisk.
Once your batter is ready, cook on a griddle or cast iron pan for pancakes or use a waffle iron for waffles.
Serve with Canadian maple syrup and enjoy!
